Mexican Casserole Recipe - Easy Mexican Casserole

You can spice up this recipe a little more by adding taco seasoning to the ground beef before you cook it.

1 pound lean ground beef

2 cups salsa

1 (16 oz.) can chile beans, drained

3 cups tortilla chips, crushed

2 cups sour cream

1 (2 oz.) can sliced black olives, drained

1/2 cup green onion, chopped

1/2 cup fresh tomato, chopped

2 cups shredded Cheddar cheese

Directions

Preheat oven to 350 degrees. Prepare a 9x13-inch baking dish with nonstick cooking spray.

In a large skillet, cook the ground beef over medium high heat until brown. Stir in the salsa, reduce heat and simmer for 20 minutes, or until all the liquid is absorbed. Stir in the beans and heat thoroughly.

Spread the crushed tortilla chips into the bottom of the baking dish. Spoon the beef mixture over the chips. Spread the sour cream on top of the beef mixture. Sprinkle on the olives, green onion and tomato. Top with the cheddar cheese.

Bake for 30 minutes or until hot and bubbly.

Quick and Creamy Mexican Casserole

This creamy casserole features two kinds of soup, chili peppers, salsa and sour cream.

1 (10.75 oz.) can condensed cream of mushroom soup

1 (10.75 oz.) can condensed cream of chicken soup

1 (4 oz.) can chopped green chile peppers, drained

1-1/2 cups prepared salsa

1/4 cup milk

2/3 cup sour cream

8 (6-inch) flour tortillas

6 boneless chicken breast halves, cooked and cubed

2 cups shredded Cheddar cheese

Directions

Preheat oven to 350 degrees. Lightly grease a 9x13-inch baking dish.

In a medium bowl, combine the mushroom soup, chicken soup, chile peppers, salsa, milk and sour cream; mix until well blended. Place a layer of tortilla strips in the bottom of the prepared baking dish.

Layer in the following order: 1/2 of the soup mixture, 1/2 of the chicken, 1/2 of the shredded cheese. Repeat layers until you use up all of the ingredients. End with a layer of shredded cheese.

Bake for 45 minutes, covered, then remove the cover and bake for an additional 15 minutes.

Chicken Cornbread Bake

Two great flavor sensations come together in this casserole - chicken and cornbread.

1/2 cup margarine

1 onion, finely chopped

1 clove garlic, minced

1 (15.25 oz.) can whole kernel corn, drained

1 (15 oz.) can cream style corn

1 can cream of chicken soup

1/4 teaspoon salt

2 eggs

1 (8.5 oz.) pkg. corn bread mix

2-1/3 cups cooked chicken breast, chopped

2 tablespoons canned green chili peppers, chopped

1 (4 oz.) jar chopped mushrooms, drained

1/2 cup light sour cream

1/4 teaspoon salt

1/4 teaspoon ground black pepper

1 (8 oz.) pkg. Monterey Jack cheese, shredded

Directions

Preheat oven to 375 degrees. Grease a 9x13-inch baking dish.

Melt the margarine in a small skillet over medium high heat. Saute the onion and garlic until tender for 4 to 6 minutes; set aside.

In a large bowl, combine the corn, cream style corn, chicken soup, salt and the eggs.

Beat in the muffin mix. Fold in the cooked onion mixture. Pour into the prepared baking dish.

In another large bowl, combine the chicken, green chilies, mushrooms, sour cream, salt and pepper. Spoon chicken mixture over the corn mixture to within 1-inch from the edge. Sprinkle the top with cheese.

Bake for 35 to 40 minutes or until the edges are golden brown.

    Many cooking and baking recipes require eggs. An egg cooker is a great help in the kitchen to cook eggs faster and more efficiently. There are various types of egg cookers and different models.

    Make a Shared Christmas Gift for Under £20 (christmas Cake!)

    Christmas time’s favourite phrase must be “do you remember when…?” as families catch up and remember past times with wry smiles, chuckles and the occasional foot stamp preceded by pantomimic exclamations of “oh no I didn’t!”.  The rush of memories flooding back as we dig into the purchased Christmas Cake of despair when the taste of an overly-sweet dry cake makes us hark back to stickier times when Christmas cakes were moist, moreish, fruity and baked at home, with love.
    Barbara Walker, Co-Manager of the Jamaican boutique hideaway spot Hotel Mockingbird Hill, whose organic Restaurant Mille Fleurs has been acclaimed by Gourmet Magazine, believes this is the one time of the year that those who ‘don’t cook’ should take a Sunday afternoon to get back into the kitchen. 
    Barbara says “I don’t have to go into the kitchen that often anymore and I am happy to leave the kitchen space to our wonderful trained Chefs, however the first Sunday of December is when I break that rule and the oven becomes mine, bearing in mind that I never bake.  There is nothing better than spending the afternoon stirring, whisking and beating whilst remembering my Mother’s wonderful Christmas Cake Recipe, which she is now passing on to her granddaughter. Just knowing that I can create something to share at Christmas, which is so good, that it is being handed down from one generation to the next without alteration – that is quite a rare accomplishment in today’s world.”
    If you don’t have a family Christmas cake recipe to celebrate this holiday season why not try hers:

    Barbara’s Rich Jamaican Rum Christmas Fruit Cake
    :
    (for spices these are only guidelines – check and adjust to personal taste)
    1.5kg finely chopped mixed dried fruit (use a blender or food processor if you prefer a smoother type of cake and preferably fruit that has been steeped in golden rum for a minimum of 2 weeks for before cooking date)
    500 gm brown sugar
    500 gm butter
    750 gm flour (we use whole wheat but you could use white, if so you’ll possibly have to check the consistency) –if the mixture seems a little too wet add a little flour
    1 tbsp. cinnamon powder
    1 tbsp. nutmeg grated
    1 tbsp.pimento powder (allspice)
    1 tbsp. baking powder
    1 doz. eggs
    2 tbsp. vanilla essence 
    Pinch of salt
    Method:
    Cream sugar and butter until it is white and fluffy.
    Seive the flour and mix in the dried spices, salt and baking powder
    Alternatively add one egg at a time followed by a few tablespoons of the spiced flour mixture
    When all eggs and flour are thoroughly mixed add the vanilla essence
    Add enough of the fruit mixture until it gets a rich brown colour.
    Put into baking tins which are lined with grease-proof paper and bake at a very low temperature 100C for approx. 2.5 -3 hours (and enjoy the aromas in the kitchen while the cake bakes!)

    This cake is a moist cake so when you test it with a needle or pin, it will always be a bit sticky but check that the mixture is cooked through.

    When cake is done, take it out of the baking tins immediately otherwise it will sweat. Leave to cool.
    When cool, return to baking tin or to a storage tin and pour about 12 cl. (about 3 pegs or double shot) of rum and close the tin. Repeat this once a week till Christmas – the longer the cake is stored, the better it tastes!
    The fun part about this mixture is that it can also make the Christmas dinner’s Christmas pudding: instead of baking all the mixture put some into greased and floured pyrex dishes, cover firmly with greaseproof our brown paper and steam -1½ hours in a pressure cooker or 2½ -3 hours in a bain-marie. When done, open up, pour over about 12cl of rum and put away for Christmas day. Repeat this once a week till Christmas – the longer the pudding is stored, the better it tastes! On Christmas day just warm up the pudding for about ½ hour in a bain-marie and serve with rum butter.
    So an easy gift for your family & Father Christmas in 3 easy steps:
    1.    Steep you fruit in golden rum
    2.    Bake the cake and steam the pudding
    3.    Let the cake soak “golden sunshine” rum in a minimum of 2 weeks leading up to Christmas.

    In this video, we show you how quick and easy it is to make eggs in the microwave. INGREDIENTS 2 eggs salt, pinch to taste METHOD Sprinkle a few grains of salt in the bottom of the egg cooker. This helps to cook the egg evenly. Break one egg into egg cooker. Microwave one egg at a time, or adjust your cooking time accordingly.     What's for Dinner? Golden Mushroom Pork Chops Under Pressure

    Greetings! Tonight, we are going to make golden mushroom pork chops in my electric pressure cooker. Please don't be discouraged if you don't have a pressure cooker, no problem here, just plan ahead to make this recipe in your crock pot or in the oven. No matter if you pressurize this recipe or if you slow cook it, this will be a welcome dish at the end of a long day. here is what you will need to make this recipe: 2 Pounds of assorted pork chops 3 Cans of Golden Mushroom Soup 1 pound of baby carrots or cut up fresh carrots 1 14 ounce can of mushroom stems and pieces 1 soup can of water salt and pepper to taste prepared egg noodles to serve along side In the cook well of your pressure cooker (or crock pot or baking pan) place canned mushrooms and their liquid along with the soup from all three cans. Mix well and add one soup can of water. Blend well. Add in carrots and pork chops season with salt and pepper and maybe some thyme would be nice as well. Cook under pressure according to manufacturers instructions. If you are using your crock pot, just put this lid on this puppy and place the dial to low and go to work or whatever it is you do during the day and your dinner will make itself. If you would like to make this in the oven, place the ingredients in a baking dish or foil pan and cover with foil and place the whole thing on top of a baking sheet lined with foil or parchment, this way if there is a mess, clean up will be easy. Bake at 325 for about 3 to 5 hours ...

    It's chili night! That phrase brings many happy memories to me. Being one in a family of seven can make eating an issue. My mother learned early how to feed a hoard of kids cheaply. As a result her chili tended to be soupier than I like it now but it is still a happy memory. The first chili I made after leaving home was thick enough to stand a spoon in. I have also come to like a bit more spice in it than mom put in hers. She was making sure bellies were full and tomato juice and crackers are good for that. What she accomplished in flavor and content did serve its purpose. I think that it can be built on though.

    Kamado Cooking For Chicken

    If you're not familiar with a kamado it's a derivation of an ancient Chinese clay cooking pot that was later adapted by the Japanese (who named it Mushikamado) and it finally made it to the western world in the middle of the last century. Nowadays the clay has been replaced by high performance ceramic, it still typically is fuelled by charcoal but the versatility of the ceramic barbecue grill is pretty amazing. There's a variety of brands on the market such as the Primo kamado and the Big Green Egg but it has to be said that trying to find a kamado ceramic barbecue in Europe is still a thankless task.

    The kamado is so versatile in that you can use it as a grill, smoker or even as an oven. The temperatures you can reach make it possible to cook pizza and I also like to use mine to mimic the tandoor and it's great for chicken tikka and naan bread. For today however I'm going to concentrate on the whole chicken and use my kamado as a smoker and a traditional oven.

    Roast Chicken

    A roast chicken dinner has to be one of my favorites and cooking the chicken in the kamado makes for a fantastically moist bird and what's more it couldn't be more simple. It's just a matter of heating the kamado up to the normal roasting temperature of 180°C and applying the rule of 20 minutes per pound plus 20 minutes and you'll get it right first time and every time. Put a drip tray under the bird with about an inch of water in it for added moisture and really tasty gravy.

    Because you're cooking at a normal roasting temperature you can also do your roast potatoes at the same time and just one final tip for the chicken:-

    Sprinkle the bird with salt and pepper before cooking to give a simple flavor and the salt with crisp up the skin. Stuff the cavity with 10 cloves of garlic.

    Smoked Chicken

    The kamado barbecue is the most economical smoker that I've ever used. Thinking back to the days of an offset bbq smoker and tending the coals every hour really doesn't excite me and thankfully since I bought my Big Green Egg it's now become a thing of the past. The kamado has to be the most economical outdoor cooker that I've ever used, load it up with charcoal and it will happily run at a "normal" smoking temperature for five or six hours without the need to tend it. Just keep your eye on the thermometer every hour or so and adjust the vents if appropriate.

    All the flavor for smoked chicken has to come from the smoke because if you salt the bird then this will make it dry out. Feel free to season with a little pepper and as an option you can inject the bird with some olive oil and this will keep it super moist and add a little flavor. For smoke, try bbq wood chips from a citrus fruit such as lemon, a subtle flavour for a subtle meat.

    The cooking process for smoked chicken is pretty simple, just work on 60 minutes per pound of meat at 120°C and you'll be about right. To test whether it's done you can ether use a barbecue thermometer or simply skewer the chicken in the thigh and check that the juices run clear. Once cooked, put the bird aside to rest for 30 minutes, it will still cook and as the chicken cools, the juices will be sealed into the meat and this means that any leftovers will be great cold. Leftover chicken breast can be dry but not if you follow this smoked chicken recipe.

    Easy Crock Pot Meals

    One of the best ways to warm up winter is to load the crock pot with goodies in the morning and let it cook all day. The crock pot is an awesome way to have a delicious home cooked meal after working or playing all day long.

    Beef Fajitas Crock Pot Recipe

    1-1/2 lbs boneless sirloin, cut into thin strips
    2 tablespoons vegetable oil
    2 tablespoons lemon juice
    1 clove garlic, minced
    1-1/2 teaspoons ground cumin
    1 teaspoon seasoning salt
    1/2 teaspoon chili powder
    1 green bell pepper, thinly sliced
    1 onion, thinly sliced
    6-8 flour tortillas
    shredded cheddar cheese
    salsa
    sour cream
    lettuce
    tomato

    Brown the steak in oil. Place the steak and drippings into the crockpot. Add lemon juice, garlic, cumin, salt and chili powder; mix well. Cover and cook on HIGH for 2-1/2 to 3 hours, or until the meat is tender. Add green pepper and onion; cover and cook for 1 hour more. Warm the tortillas. Spoon beef and veggies down the center of the tortillas. Top each with cheese, salsa, sour cream, lettuce and tomatoes if desired.

    Crock Pot Pizza Casserole

    1 1/2 lb Ground beef
    1 can (14 oz) pizza sauce
    1 pkg (12 oz) noodles
    4 oz Cheese, mozzarella
    1 small can Mushrooms
    1 Onion, diced
    1 can (14 oz) Spaghetti sauce
    4 oz Cheese, cheddar
    1 pkg Pepperoni
    1 green pepper, diced

    Brown meat & onion. Drain grease & add sauces. Cook noodles.
    Put layer of noodles, meat mixture, cheeses & pepperoni In Crock Pot. Repeat layer. Cook on High for 30 minutes. Reduce heat & cook for 1 hour until cheese melts. Serves 6

    Crock Pot Meat Loaf Recipe

    2 1/4 pounds ground beef
    1/4 cup ketchup
    2 tablespoon brown sugar
    1 egg
    1 cup breadcrumbs or crushed crackers
    2 tablespoon Worcestershire sauce
    1 large onion (diced)
    1/4 cup water

    Mix all ingredients in a large bowl. Form into a meatloaf shape that will fit into your crock pot. Cut a strip of foil and place under the meatloaf in crock pot. Cut it long enough to cover the bottom and sides of meatloaf. Place meat loaf in crock pot and top with additional 2 tablespoons ketchup. Cover and cook on low for approximately 8 hours. Serve with fresh, hot rolls.

    All Day Slow Cooker Delight Recipe

    2-3 lb Boneless chuck; cut in 1"cubes
    1/2 c Flour
    1/4 c Butter
    1 Onion; sliced
    1 tsp Salt
    1/8 tsp Pepper
    1 Clove garlic; minced
    2 c Beer (I usually use Guinness Stout)
    1/4 c Flour

    Coat beef cubes with the 1/2 cup flour. Brown in melted butter. Drain off excess fat.
    In slow cooker, combine browned meat with onion, salt, pepper, garlic and beer. Cover and cook on low 5-7 hours (all day) until meat is tender. Turn control to high. Dissolve remaining 1/4 cup flour in small amount of water. Stir into meat mixture, cook on high 30-40 minutes. Serve with rice and salad.

    Chicken and Dumplings

    4 boneless skinless chicken breasts, cut in small chunks
    2 cans condensed cream of chicken soup
    1/4 cup onion, finely diced
    2 cups water
    2 10 oz packages refrigerated biscuits
    1 chicken bouillon cube

    Combine all ingredients, except biscuits, in slow cooker. Cover and cook on low for 5 to 6 hours. 30 minutes before serving, tear biscuit dough into 1-inch pieces. Add to your slow cooker; stirring gently. Cover and cook on HIGH for an additional 30 minutes or until biscuits are fluffed up and cooked through.

    Cooking Family Food on a Budget

    In this interview we spoke to mum of two Kimberley Saunders about cooking healthy food for a family of four living on a tight budget.



    Is it hard to cook good quality meals for our children when you are on a budget?



    No, not really because it depends on how well you know the basics of cooking and nutrition. A lot of that's been lost as they didn't teach it in schools in our generation and there are people who think you have to buy things that are cheap on the price label without realising that it's not healthy or that it's actually more expensive than it lookss.



    Does cheap meals mean burger and chips?



    No it doesn't. You can buy a bag of chips for about a pound and that will only do one or two meals for a family of four, but you still have to have the burgers and there's a lot of fat in that food.



    What are the alternatives?



    You could still have a meal of hamburger and chips but adapt it. There could be a lean turkey mince homemade meat patty, put under the grill and serve with green beans and sweetcorn. For a family of four that'd be around £2.50. I'm not saying that chips aren't fine for the occasional treat. The green beans you could get fresh, tinned or frozen so it's available to anyone regardless of budget.



    What about kids that are picky?



    I do understand that some people say their kids won't eat some things. It takes a bit of fortitude and patience to get a child to eat healthily. One of the things that kept me going was saying that there are children in Africa who've never seen a chip in their life. If a child is hungry they're going to eat it.



    What tips would you give parents?



    Start small, start healthy versions of their favourite food. Chicken nuggets for example. We got chicken breasts and made our own. We did roasted potatoes instead of chips. Fish fingers we turned into tuna patties. It's a bit of tuna fish mixed with a bit of egg, put breadcrumbs over the top and cook.



    What about mothers who are pressed for time?



    The tuna patties are as simple as opening the tin and popping under the grill. I know a lot of mothers are pressed for time. Why not invest in a slow cooker. You can do roasts, soups, casseroles. You can even do puddings in it.



    Should we shop in the supermarkets or smaller shops?



    Look at what you're getting and what you have available in your area. If you have a good market by you it's cheaper to go to the market to get your vegetables. If you've got a good local butcher get to know him. If you have some garden space grow your own vegetables. It's important that children know where their food comes from. I know my children wouldn't touch tomatoes until we grew cherry tomatoes in our own garden.



    What basics should we have in the cupboard to try and save money?



    A good stock cupboard would include tuna, tinned fruit and vegetables with no salt added. I would recommend always having eggs on hand - another quick meal.



    What other tips do you have?



    A big portion of our budget goes on food. I write meal plans so I know what I am going to cook. I'd go to the supermarket and not even look at the offers. You really can feed a family on a very small budget.

Ingredients: 1 cup self-rising flour 1 egg, well beaten 1 cup milk 1/4 cup vegetable oil sweet banana peppers, washed, dried, seeded with pulp removed, and cut into serving pieces 2 inches of cooking oil in a deep fryer or pot on the stove (I used peanut oil.) In a large mixing bowl, combine 1 cup self-rising flour, 1 well-beaten egg, 1 cup milk, and 1/4 cup vegetable oil. Stir completely, or blend with an electric mixer. Have your sweet banana peppers prepared for cooking. Heat 2 inches of oil in an electric deep fryer or a pot on the stove to somewhere between 345 degrees and 375 degrees. With tongs, dip pepper pieces in batter, allowing excess batter to drip into bowl, and then transfer to hot oil. You may fry several pieces at the same time. Fry until golden brown on both sides, and then remove with tongs or other utensil and place on paper toweling to drain. When all pieces are fried and removed, pat the upper side to remove any further excess oil. Now, place the Deep-Fried Banana Peppers on a nice serving dish, and serve with Surfin' Seafood ...

Ingredients: 1 pound lean ground beef 2 1/2 tablespoons fine, dry bread crumbs 1 egg, well beaten 1 teaspoon salt 1 cup onion, finely chopped 1 cup green pepper, finely chopped 2 tablespoons butter or margarine, melted 10 3/4 oz. can tomato soup 2 tablespoons brown sugar 1 tablespoon prepared mustard 1 tablespoon white vinegar In a large bowl, mix 1 pound ground beef, 2 1/2 tablespoons dry bread crumbs, 1 well-beaten egg, and 1 teaspoon salt. Shape into approximately 48 small meatballs. Place on a broiler pan (or a shallow baking pan), and broil at 400 degrees until well-browned, turning once. Remove from the oven, and drain off any excess fat. In a medium skillet, cook 1 cup chopped green onion and 1 cup chopped green pepper in 2 tablespoons melted butter, until tender. Stir in a 10 3/4 oz. can of tomato soup, 2 tablespoons brown sugar, 4 tablespoons Worcestershire sauce, 1 tablespoon prepared mustard, and 1 tablespoon white vinegar. Place cooked meatballs in a slow cooker and pour sauce over them. Stir to coat the meatballs with the sauce mixture. Cook on High for about 2 hours, in order to blend the flavors.     Fish Cutlet Recipe - A Spicy and Hot Indian Recipe For Fish

    This Fish Cutlet recipe is very easy to make.

    It can be served as an appetizer, snack or a side dish.

    It is good to include an oily fish in our diets at least thrice a week. So if you want you can use an oily fish or a white fleshy fish for this recipe.

    Make the cutlets as hot as you desire. The idea is to balance all the flavors.

    To make these cutlets you will need


    500 g fish steak (oily or white fish) 300 g of potatoes (approximately) 2 medium Onions (Chopped finely) 3-4 green Chilies (chopped finely) 1 cup fresh Coriander (chopped finely) 2 Tbsp of Ginger-Garlic paste Salt to taste 1/2 Tsp red Chili powder 2 Tsp Coriander powder 1 Tsp Roasted Cumin powder 1/2 Tsp Garam masala (optional) 3-4 Garlic cloves, 1 inch ginger, 7-8 peppercorns and 1 tsp fennel seeds Water 1 egg (lightly beaten with a pinch of salt) Bread crumbs Oil for frying

    To boil the fish, place the fish in a saucepan and cover it up with water (just enough to cover the fish). Pound the garlic cloves and ginger knob and add it in the water, along with the peppercorns and fennel seeds. Bring it to a boil and cover and simmer for 5 minutes or until the fish is done. Let it cool down.

    Meanwhile boil the potatoes (in a pressure cooker or as you please). Grate or mash.

    Also keep the beaten egg in a bowl and bread crumbs in a flat plate.

    Remove the fish from the water, clean the bones and put all the flesh in a bowl. Add the mashed potatoes, chopped onions, chilies, coriander leaves, ginger-garlic paste, salt, lime juice and the rest of the dry powders.

    Get your hands dirty. Mash and mix well. Sneak a taste and make adjustments if any.

    Make the cutlets by shaping as desired (round or oval). Shape into small balls and place in between your palms and press gently, to flatten them a little.

    Take each cutlet, dip it in egg and immediately roll it on all sides in the bread crumbs. Place all on a tray and once all cutlets are done, cover up with a cling wrap and put in the refrigerator for at least an hour. This helps the bread crumbs to set well on the cutlets.

    Heat the oil for frying in a deep pan or kadai, and deep fry the cutlets in batches of 3-4 on a low to medium heat. When evenly brown on all sides, take out with a slotted spoon and drain on kitchen paper.

    Serve with a dip or sauce of your choice.

    Tips:

    Always fry just one cutlet first, to check if the temperature of oil is ok. This way you lose just one if something goes wrong.

    Make lots at one time and store in the freezer for up to a month. This saves a lot of time. Defrost and reheat under a hot grill or on a griddle on the stove. Do not heat in the microwave.

    When you put the cutlets in the oil for frying, avoid turning them immediately, lest they might break. Wait for a minute or so and then turn them over. Keep turning occasionally to get an even brown color.
